I had a bit of a bloggers dilemma while considering writing this post. This is one of my favourite meals, it’s easy to put together, it’s made entirely from pantry items, and it’s delicious. So why would I hesitate?
Well, it ain’t sexy. I stuck a parley sprig garnish on it because while I was taking the pictures all I could think was “man, that’s brown”. Brown food is a tough sell. What does sells in the food blogging world is dessert. If you need proof have a look at the FoodBuzz Top 9 on any given day; it’s heavily slanted towards sweets, but honestly who can eat that much sugar and maintain any semblance of health?
Don’t get me wrong, I love dessert, but most of what I eat is more along the lines of this meal. Simple, healthy, and still delicious. So I decided to share my boring lentil recipe with you, even though it won’t spike my traffic, because it’s good, and I love it, and you should try it.
French Lentils with Feta
- 2 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup French Lentils
- 3 cups vegetable broth
- 1/2 tsp dried thyme
- salt and pepper to taste
- feta, crumbled
- parsley to garnish
- brown rice to serve with
- In a pot over medium high heat, heat the olive oil. Add the onion and cook until translucent. Add the garlic, cooking until fragrant.
- Add the lentils and vegetable broth. Season with salt, pepper and thyme.
- Bring to a boil, then lower the heat and simmer the lentils until cooked (about to minutes)
- Serve over brown rice, topped with feta and parsley. Don’t skimp on the feta, it makes the meal.
Enjoy!
Hey Lynn, haven’t seen much from you these days, I guess as a result of trying to sell your place. I dunno, I think this looks delicious in all it’s brown glory. But you’re right, what is most eye-catching are the sweets. I think this is a great picture, though!
Thanks! Getting the place ready to sell has taken up so much time, hopefully it will sell quickly so I can go back to my normal life!
I completely agree that desserts have dominated a lot of the top 9 posts, but I have to tell you that your post update is what actually caught my eye among all the other dessert photos! It’s not easy to have a simple but elegant and well composed dish and yours is just that! I love it! Keep them coming!
If I had to eat one thing for the rest of my life it’d be rice and beans! Thanks for sharing your ‘simple’ meal! :)
This looks so fresh, even though it’s brown! Great job, this recipe isounds super!
Well I’m glad you did decide to post this recipe, it’s a great combination of flavors and I think everyone likes a simple meal that can be made from pantry items.
Looks simple, but cute and really good dish :)
I love lentils and yours look delicious! It’s true that brown food doesn’t really photograph well, but you certainly did your version justice! It truly does look so comforting and yummy. A white plate always helps, too, I think. :-p
I’m so with you on the sweet overload. Although my last post was all about sweetness. I like simple but tasty meals like this. And I think it looks beautiful. No lie!
Amen! I for one much prefer savory over sweet dishes. Your photo is actually beautiful and this dish sounds wonderful. I love the combinations of lentils and feta. Yum!
Dessert may be sexy, but lentils are delicious and comforting, which is a million times better than sexy. So there. :)
Love the addition of feta… I’ve never tried that particular combination before, but it sounds wonderful. My ever-expanding hips thank you for sharing such a sensible, delicious, healthy recipe.
Actually sounds like a recipe I would definitely try out. Are the lentils you’re using dry? Silly question but I’ve only ever bought lentils in a can.
I should have specified in the recipe. I used dry lentils, but canned would work too. I would cut back the cooking time to 10-15 minutes so that the lentils don’t turn to mush.
I like seeing everyday healthy food on blogs, like a plate of delicious lentils. I think the best cure for brown food is chopped herbs so you’ve got it all goin on! And enough already with frosted cupcakes, healthy everyday ideas for meals is a tad more useful, thanks for sharing;-)

Desserts Smeerts, Bring on the lentils! I think I’ll make this tonight!

Seriously. Your comment about Foodbuzz is so true. I’m often shocked by people who post dessert recipes nearly every day. How is that possible?! I actually had a salad make it into the top 9 once — shocker!
Your recipe looks great. I love lentils and always have these ingredients in my kitchen. This is how I eat a majority of the time and am always looking for recipes like this. Thanks for sharing.
Well, these are definitely the sexiest lentils I have ever seen! The recipe sounds fantastic. I’ll have to give it a try.
Lynn, this sounds scrumptious. I make a similar dish (Esau’s Pottage) and mentioned it in passing in one of my cooking classes. Half the class requested the recipe – reinforcing that man can’t live by dessert alone. Thanks for the post. I think you just saved me having to run to the grocery store to get something for supper.
mmmmmm Feta and Lentils! I LOVE IT! That sounds like such a great combination. I will have to try this soon.
Oof, I love feta. That dish looks beautiful! How did you take such a great photograph?
I have been looking at this recipe pretty much since you posted it, and I finally tried it this weekend- DELISH!!!
I couldn’t find French lentils, so I had to use green…not as fancy-sounding, but still amazing. Even my carnivore husband scarfed his plate down.
Thanks for helping us get healthy! We’re really trying to cut down our meat consumption, and this meal is perfect.
I’m so glad you liked it!
